Lemon Chicken and Artichokes

This dish is a bit monochromatic in appearance, but far from dull in taste. Full of healing and nourishing ingredients that are anti-inflammatory, gut nourishing, and glow-boosting. Bone broth helps heal the gut and boost collagen, while the artichokes are a good prebiotic for your gut microbiome. Chicken thighs are aless expensive cut of chicken yet full of flavor, and choosing organic free-range is always best.



Lemon Chicken and Artichokes

cook time :25-30 minutes


1 package frozen riced cauliflower

3 tablespoons chicken bone broth, plus more if needed while cooking

6 - 8 organic free range chicken thighs

1 package frozen artichoke hearts

1 medium onion, chopped

1/8 tsp tumeric

3 cloves garlic, smashed*

1/4 cup fresh lemon juice

1 tsp parsley

salt and pepper to taste


Place riced cauliflower and bone broth in a large skillet, cooking over medium high heat. Add artichoke hearts, chopped onions, turmeric, salt and pepper. Cook until chicken is nearly cooked through. Mince garlic and add to skillet along with lemon juice and parsley. Finish cooking chicken until it reaches an internal temperature of 165 F.

Serve with additional parsley and lemon slices if desired.













*by smashing garlic and allowing it to sit for several minutes before heating triggers an enzymatic reaction that boosts healthy compounds in garlic. Once the garlic is heated the enzymatic reaction is halted.
