Lemon Vanilla Bites

Gluten Free Keto Low Carb Grain Free Paleo

If you are desperate for a taste of summer these are going to be immensely satisfying. Just the right punch of lemon, you might think you are sitting on the front porch sipping lemonade with a friend. Almost. So invite over a friend and combine these with a healing tea.

INGREDIENTS


4 oz organic cream cheese or dairy free cream cheese for dairy free* (such as Daiya)

4 T coconut oil

1 scoop collagen (vanilla collagen works well)

Half a lemon, sliced**

2 - 3 T classic monk fruit to desired sweetness

1/4 tsp maca root, optional

Pinch of pink salt

Place all ingredients in a food processor and process till smooth. Pour into silicone molds or ice cube trays and freeze.

If using plain collagen add 1/4 tsp vanilla

*Another option for dairy free is to use almonds without their skins. Replace 4 oz of cream cheese with skinless almonds. Be aware this will create an entirely different texture than cream cheese, but will still taste delicious.

**Sometimes lemon peel can be bitter. You may choose to only use the juice if the outer peel is not ideal, showing brown spots or being off color.
