I am all about upgrades when it comes to what we eat. In the winter, oatmeal is on repeat around here (not the package mixes, from scratch always!) because it warms the belly and fills kiddos up, for at least a few minutes anyways. Here is an easy way to upgrade your oatmeal by creating a skin-loving duo, oats and flax.
Flax seed is high in fiber and EFAs and supports hormone health, while oats support healthy digestion. Because once flax seed is ground it can quickly go rancid, choosing the sprouted form prevents this. Together this bowl is a warming breakfast high in fiber and topped with nutrient rich options.
Serves 2
Ingredients
1 cup of purified water
1 cup unsweetened coconut milk (or other nut milk of choice)
1/2 cup gluten free rolled oats
1/2 cup sprouted ground flax
1/2 teaspoon Ceylon cinnamon
1/4 teaspoon Himalayan pink or Celtic sea salt
Top with: berries of choice, shredded coconut, toasted pecan pieces
Directions
Bring water and milk to boil. Add oatmeal and flax, reduce heat. Cook according to oatmeal directions.
When fully cooked pour into bowls, top with berries, coconut, and pecans. Drizzle with pure maple syrup (to entirely eliminate sugar, stir in a pinch of stevia or a tablespoon of monk fruit at the end of cooking). Enjoy warm.
