Star Crossed Smoothie Bowl

Writer's picture: Jennifer GarnJennifer Garn

I am a big fan of putting smoothies into a bowl whenever time allows. This smoothie bowl is simple but nourishing. The toppings are the fun part, be creative, it is always fun to try something new. I tried a Star fruit for the 1st time (what took me so long?). Not only is this fruit cute with its star shape, but it has a mild taste, and a long list of benefits. Just a few benefits of star fruit include: boosts digestion, low in sugar, and may aid in weight loss.

Ingredients:

1 cup unsweetened coconut milk

½ avocado, skin removed

½ star fruit

1 scoop greens powder*

2 tablespoons pure organic aloe juice

Directions:

Toss all of these ingredients into your blender and blend till smooth. Pour into a bowl.

Topping suggestions (choose organic when possible):

Cacao nibs

Bee pollen

Hemp seed

Blackberries

Remainder of star fruit

*Powdered greens are an excellent way to get an assortment of superfoods into your diet. Typically mild in taste they usually blend into recipes easily.
